Cauliflower Mashed “Potatoes” (Healthy Holiday Version)

Ingredients

  • 1 large head cauliflower, cut into florets

  • 2 tbsp light butter

  • 2 tbsp plain Greek yogurt

  • ¼ cup low-fat milk (more if needed)

  • 2 cloves garlic, minced

  • ½ tsp salt

  • ½ tsp black pepper

  • ½ tsp onion powder

  • ½ tsp garlic powder

  • 1 tbsp chopped parsley (garnish)

Instructions

  1. Steam cauliflower florets until very soft (about 10–12 minutes).

  2. Drain well and pat dry to remove excess water (important for creaminess).

  3. Add cooked cauliflower to a blender or food processor.

  4. Add butter, Greek yogurt, milk, minced garlic, salt, pepper, onion powder, and garlic powder.

  5. Blend until smooth and creamy, scraping down sides as needed.

  6. Adjust thickness with a splash more milk if desired.

  7. Taste and adjust seasoning.

  8. Spoon onto your plate and garnish with parsley for a holiday finish.
