Instructions
Prep the mushrooms: Preheat the oven to 400°F (200°C). Clean the mushrooms and pat them dry. If they are large, cut them in half; leave smaller mushrooms whole.
Season: Add the mushrooms to a mixing bowl. Toss with olive oil, minced garlic, smoked paprika, thyme, oregano, salt, and black pepper until evenly coated.
Roast: Spread the mushrooms in a single layer on a parchment-lined baking sheet. Roast for 15–18 minutes, stirring once halfway through, until tender and lightly browned.
Finish: Remove from the oven and drizzle with fresh lemon juice. Toss with chopped parsley and adjust salt and pepper to taste.
Serve: Transfer to a serving dish and garnish with extra parsley or lemon wedges if desired.
Frequently Asked Questions
Can I use frozen mushrooms? Fresh mushrooms work best for roasting. Frozen mushrooms tend to release more water and may steam instead of roast, so the texture won’t be as firm.
Can I make these mushrooms ahead of time? Yes. Roast the mushrooms up to a day in advance, then store them in the refrigerator. Reheat on a sheet pan in a 375°F oven for 8–10 minutes to bring back their roasted flavor and texture.
